Community SPotlight: Carolyn Garber
This month, we are shining the spotlight on Carolyn Garber, a faithful volunteer who has donated her time and efforts to North Lawndale since moving to River Forest with her husband, Larry, in 2020. Carolyn, a retired nutritionist, supports the North Lawndale community by creating recipes and health resources for Harmony Food Pantry clients.
As we know, there has been a nationwide egg shortage, and with the cost of eggs being so high, Carolyn took the time to develop recipes for our community that include egg substitutions. Last week, she hosted a tasting at Grace Lutheran, where she shared muffins made with different egg replacements for Food Pantry volunteers. Through her innovative problem-solving and dedication, Carolyn continues to make a meaningful impact. She is a wonderful asset to the Harmony community! Thank you Carolyn!
